Preserving fresh herbs
As we’re approaching the end of summer, harvest time gives us fresh herbs, veggies, and fruits in abundance. Herbs can be dried and frozen, but preserving herbs in salt is also a great way to preserve herbs. Making herb salts is a great way to preserve your fresh summer herbs. They’re easy to make at home.
Our garden is not big enough to be self-sufficient, but we can still buy fresh produce when it’s at its peak. If you buy herbs when they’re in season they are usually cheaper. There is plenty available which makes this a great time of year to buy a lot.
Which herbs are good for herbal salt blends?
Almost all herbs are good to use for herbal salt blends. Herbs like rosemary, thyme, oregano, basil, lovage, dill, parsley, and chives are all great herbs for making herbal salts.
You can use dried herbs as well, but fresh herbs add more flavor and aroma to the salt.
Salt for herbal salt blends
I prefer unrefined sea salt for cooking and baking because it is rich(er) in minerals. And, sea salt is a great option for making homemade flavored salt.
Fleur de Sel is a good choice for making herbal salt blends, and so is pink Himalayan salt and (coarse) Celtic sea salt.

These herb-infused salts are great to put in the table and sprinkle over a finished dish, or, put them in a glass jar and add a pretty label and give your homemade herb salt as a gift.
The only thing you need is good-quality salt and herbs of your choice. Use fresh herbs to make herb salts for the best flavor and aroma.
Finely chop the herbs, or use a food processor to chop the herbs and mix with the salt. I like to use a 1:1 ratio. So 1/2 cup of salt to 1/2 cup of finely chopped herbs.
NOTE: Don’t use the 1:1 ratio for weight!
Instructions:
- Wash & strip the herbs off the stems (if necessary)
- Chop the herbs very finely or use a food processor
- Mix the herbs with the salt
- Dry the salt in the sun, or in the oven at a low temperature
- Store in glass jars

Herbal salts are simple and quick to make and that makes this herbal salt recipe great for some experimenting!
You can get creative here and make all the herb salt blends you like. You can make your homemade gourmet salts. Think of dill-infused salt, rosemary salt, garlic salt, and basil salt.
