About Millet
Although millet is no longer commonly used in the Western world, it is a highly nutritious ingredient that is worth considering.
Millet is packed with proteins, antioxidants, and vitamins, including E, B1, B2, B8, B11, and vitamin B17, which is often lacking in Western diets. Additionally, millet is a rich source of zinc, magnesium, and iron. Plus, millet is gluten free!
In Asia and Africa, millet is still widely used and is known by various names, such as Jowar or great millet. In other parts of the world, varieties like Ragi, also known as finger millet, are commonly used.
Personally, I like to use millet flakes and grind them in my food processor until they reach a millet flour consistency.

How to Make Millet Chocolate Chip Cookies
Firstly, measure your millet flakes, oats, and whole einkorn.
To start, use your food processor to finely grind your millet flakes and oats. Then, mix all of your dry ingredients in a separate mixing bowl and whisk them to ensure even distribution.
Next, add the butter to the mixture and combine with a hand mixer equipped with dough hooks until a firm cookie dough is formed.
For the final mixing, it’s best to use your hands. This will allow you to better feel whether or not the dough is coming together properly. If the dough is still too dry, gradually add one tablespoon of water at a time until it reaches the desired consistency for cookie dough.
Shape the dough into a ball and let rest in the fridge for 10 minutes so it can firm up a bit.
Take little bits of the dough and form them into balls. Press flat until it reaches the desired tickness and shape.
Place them on your parchement-lined baking tray and space them evenly.
Bake the millet chocolate chip cookies for approx. 10 minutes or until the sides start to brown. Let them cool completely before serving.

Millet Chocolate Chip Cookies with Einkorn and Oats

Ingredients
- 100 grams millet flakes
- 100 grams of oats
- 100 grams of whole einkorn
- 100 grams of unrefined cane sugar
- 100 grams of butter
- 100 grams of chocolate chip cookies (or more...! :D)
- pinch of salt
Instructions
- Preheat the oven to 392°F/ 200°C
- Line your baking tray with parchment paper.
- Measure all dry ingredients.
- Mix oats and millet flakes to a fine powder.
- Combine all dry ingredients.
- Add the butter and with a hand mixer with dough hooks attached mix untill a form cookie dough forms.
- If the dough stays too dry add one tbsp. at a time untill a firm dough forms.
- Chill the dough in the fridge for 10 minutes.
- Form little balls and press flat to make the cookies
- Line them on the baking tray and bake for 10 minutes, or until the sided start to brown.
